Challenges

Kerry Taste & Nutrition are looking for commercially ready solutions and/or research partners in the natural clean label food ingredients area specifically covering: flavour/flavour precursors; preservative alternatives; meat alternatives; novel manufacturing processes to create natural great tasting food products without food safety concerns.

1. Natural, clean label sources of flavour/flavour precursors

Flavours/flavourings have been a key addition to processed foods for decades. However, they now have negative connotations with consumers. Kerry are looking for natural alternatives (or precursors that can provide flavour following further processing/treatment) that have recognisable labels that consumers can trust.

2. Natural clean label preservative/antioxidant alternatives

Preservatives (e.g. nitrates in meat, benzoates in beverages, BHA/BHT in high fat products) are used to prevent microbial/oxidative spoilage. Kerry are looking for natural clean label alternatives which provide similar function in food and beverage products.

3. Natural clean label meat alternatives

There is a growing consumer trend to reduce meat consumption due to health/sustainability/animal welfare concerns. Kerry are interested in sourcing natural non-allergenic clean label ingredients that can be used as/further processed to become, meat alternatives.

4. Novel manufacturing processes to create natural great tasting food products without food safety concerns

Traditionally, high heat has been used as the method of choice to create safe food (e.g. pasteurisation/UHT/ baking/extrusion). These processes alter a food from its natural state and significantly affect the fresh aroma/taste/texture of natural foods. Kerry are looking for viable alternatives that are proven to create microbially safe food ingredients/products while maintaining aroma/taste/texture.
