Airborne contaminants at food processing facilities represent a serious threat to food safety. One of the most common are bioaerosols. These are airborne contaminants (bacteria, fungi, viruses and algae) comprised of liquid or solid microscopic particles which carry pathogens through the air. Bioaerosols are created when a source of microbes is disturbed, which then launches the particles into the air where they can remain suspended for varying lengths of time, depending on their size and the level of air hygiene in the building. Bioaerosols can be created when high-pressure hoses are used to wash down holding pens, the use of compressed air lines without filters, by poorly installed air handling units, as well as foot or vehicle traffic. In fact the filters installed in Centralised ventilation systems of the building (HVAC) trap microscopic particles and clog up. The organic particles can remain active in the filters and even multiply, creating an infection risk. Whether originating from inside or outside the food processing facility, these bioaerosols can come to rest on food or in contact surfaces where preparation work is performed. The most common bioaerosols Salmonella, E. coli, Listeria, Bacillus, and Clostridium. Yeasts and moulds are also common sources of contamination, and they frequently become predominant in food processing facilities when conditions for bacterial growth aren’t optimal, such as on foods with a high amount of salt. Viruses such as norovirus and hepatitis A are also common contaminants. PureAire technology does not use filters to clean air.
