Encap Biotech’s clean label microencapsulation platform is based on green chemical processing/technology such as coacervation, ionotropic gelation, and polyelectrolyte complex formation. The choice of biopolymers is an important step for the success of the microencapsulation processes. To achieve our objectives, we will be using a combination of commercially available biopolymers such as, alginate, chitosan, starch (cationic or anionic depending on active compounds), guar gum and wax as wall materials. In addition, lecithin will be used as a surfactant and have strong characteristics to reduce the oxidation of oil containing products. Lecithin, which is a mixture of phospholipid compounds, can provide electrostatic and steric stabilizations with alginate by protecting the core materials. During encapsulation process we will be using a high shear mixer to reduce the emulsion droplet size and achieve a homogeneous dispersion. The developed microencapsulation system will be stable at acidic pH and provide a strong barrier towards the oil components from acids (H+ ions). Gum Arabic and lecithin will stabilize the oil component by stabilizing the emulsion at different temperatures (cold and room temperatures) and will prevent the oxidation. All these wall materials are odorless, tasteless and will not have any adverse sensory effect on the emulsion. We have done some preliminary studies. Our clean label microencapsulated matrix used for encapsulation of cinnamomum cassia. After 28 days of storage, the bioavailability (%) was found around 83% and also it didn't change food colour and pH.
