Invention Edible bird nest (EBN) contains mucin glycoprotein, sialic acid, calcium, phosphorus, and other natural nutrients. Existing EBN quality assurance method uses total sialic acid as indicator of EBN quality, but total sialic acid content is subject to interference of additives. This new quality assurance method uses Triple-Quad HPLC-MS/MS, with specific testing conditions and parameters, to detect free sialic acid content in EBN samples. Since EBN adulterants contain little, if any, free sialic acid, this new method allows quick and scientific authentication of EBN.   Market Opportunity This quality assurance method is fast and accurate.
