Chinova Bioworks has developed a natural preservative for use in food, beverage and cosmetic products using natural mushroom chitosan. Our product offers broad-spectrum protection against multiple types of spoilage microorganisms, is easy to use with no organoleptic impact, has a competitive price and fits the standards of a clean label that producers need and consumers want. Chinova’s key differentiator is that we have the ability to either be broad-spectrum or customizable to fit individual producers main microbial issues without causing any changes to texture, nutritional profile, flavour or smell of the product. This in turn is highly beneficial to our clients as they are looking for naturals that can combat more than one spoilage microorganism and can even get a completely customized formulation for their specific product needs. The Product Mushroom chitosan is a fiber extracted from common food types such as white button and oyster1. The molecular structure is similar to that of cellulose with the major difference being the presence of random acetyl groups and amine groups. Fully deacetylated chitosan is a biopolymer of glucosamine and a derivative of chitin2. The proposed mechanism of chitosan’s antimicrobial action is that the positively charged free amino groups interact with anionic components of the bacterial surface and causes eventual cell leakage through changes in the cells permeability3.  However, the performance of chitosan as an antimicrobial greatly depends on the molecular characteristics of its percent degree of deacetylation (%DDA), and it’s molecular weight (Mw). Certain types of microorganisms react differently to the different compositions of the chitosan molecular characteristics. Thus no ordinary chitosan will effectively perform as an antimicrobial, unless it has the matching molecular characteristics for the types of spoilage microorganism that needs to be inhibited. Chinova’s technology focuses on the selective purification of specific %DDA and Mw mushroom chitosan to provide an optimal antimicrobial effect with consistent and reliable results. By controlling these 2 parameters of the chitosan we have dramatically improved the antimicrobial efficacy and as a result low dosages of our preservative are as effective as the conventional synthetic preservatives being used today. Chitosan is a long chain, made up of multiple units. Various chain lengths or molecular weights of chitosan are effective against specific spoilage strains. Chinova is developing personalized antimicrobial formulations that provides broad-spectrum protection against these spoilage species. Our technology is capable of inhibiting the growth of all 3 of those spoilage species and providing a broad spectrum antimicrobial effect.
