Michroma is a biotech company that uses filamentous fungi (versatile and multifunctional organisms that can be grown in scalable bioreactors) to sustainably and affordably produce natural food ingredients with high yields Currently, most colorants are made with petroleum-based ingredients, which are unsustainable and related to health issues such as allergies, hyperactivity, ADHD, and even cancer. The alternative, natural additives, have a poor performance, are expensive, and given their usage of water and land are also unsustainable. Michroma is stepping into the future by developing a disruptive way of producing food ingredients

Applications

Michroma’s red colorant has the best pH stability among the natural colorants. Our colorant is stable in virtually every application: soft beverages, hard candy, ice cream, processed meat, and cheese. Our colorant is stable in every condition needed to produce food: pasteurization, cooking, caramelization, spray-drying, extrusion. It’s the only one that shows high stability upon cooking at 250 °F at all conditions tested.
