Summary

Background

As one of Britain’s biggest listed food companies we’re committed to the UK, employing over 4,000 dedicated colleagues at 15 manufacturing sites and offices up and down the country. We operate primarily in the ambient food sector which continues to be the largest sector within the total UK grocery market. Our business is responsible for developing our portfolio of brands in five key categories: Flavourings & Seasonings; Cooking Sauces & Accompaniments; Quick Meals, Snacks & Soups, Ambient Desserts and Ambient Cakes with many of our brands being the brand leaders within their own category.

Challenge

Our client, Premier Foods are looking for innovators/experts in Heat stable food colours within a challenging pH and thermal Environment.

We’re looking for a tool kit of thermally stable natural food colours or solution to conserve the colour there of.  The colour will need to be stable within a pH base (7 – 3). 

The thermal stresses needed to be overcome range:

  • Cooking sauces (97 – 122oC)
  • Baked goods (200 - 350oC)
  • UHT (150oC)

The primary colours required are:

  • Green 
  • White
  • Red
  • Yellow

We would like the solution to remain sympathetic to our customer facing ingredient lists retaining a “store cupboard” feel but is not the main driver of the challenge. Colours which we are looking to actively replace are:

- Carmine
- Titanium Dioxide
- Annato Norbixin
