Background

With increased awareness of health and wellbeing among consumers, the food industry is facing increasing pressure to deliver healthier and sustainably made food products that provide the desired eating experience. The right level of tastes (e.g. sweetness and bitterness) is one of the key drivers for overall liking of many snacks, such as chocolate and biscuits.

Challenge

Mondelez are looking for experts or innovative technologies (in-vivo and in-vitro) that can characterize the dissolution process of taste compounds , such as sucrose and bitter compounds, during oral processing of foods.

To activate the taste receptors and be perceived as sweet or bitter, taste compounds need to be dissolved in saliva. Hence, taste perception is primarily due to the dissolution of soluble particles, such as sucrose, in snacks. However, it is not clear how taste compounds are dissolved in the saliva during eating, and how the change in taste compounds concentration in the saliva affects overall taste perception. The lack of this knowledge makes it difficult to design products with the optimum release and perception profile when developing new recipes or evaluating new ingredients for health and wellbeing purposes.
